Chris Doody — Serial Restaurant Builder

Before Piada, Chris Doody co-founded Bravo Brio Restaurant Group, growing it into a publicly traded company with over 100 locations. He knows what it takes to build a national restaurant brand from the ground up.

The Piada concept was born during a trip to Rimini, Italy, where Chris was captivated by the street vendors rolling fresh piadas — thin Italian flatbreads filled with meats, cheeses, and vegetables. He sketched the concept on a cocktail napkin that same night.

That napkin became a restaurant. That restaurant became a category. Today, Piada Italian Street Food is one of the fastest-growing concepts in fast casual, with a proven model and a runway to 1,000+ locations.
