When you come in to Piada to order our calamari – its specially made for you. Every time.
The squid we serve is found between 600 to 2,200 feet deep off the shores of Peru. They’re caught with a hook and line in the wild and have no added hormones or antibiotics. These giant squid can span up to 5 feet in length (not including their legs).
We choose to prepare calamari steaks in our restaurants rather than rings or tentacles because they are more tender and enhance the flavor. We prefer giant squid to smaller squid because the calamari tends to be more mild and sweeter in flavor.
Before cooking the calamari steak, our Chefs add spicy peppers for a bit of flavor and kick. This combo is marinated in buttermilk and then fried for a minute and a half.
Our Chefs prepare the calamari and make it to order for every Guest. In fact, our Chefs don’t cook the calamari until a Guest actually orders it.
